Duck with blackcurrant gin – Madgetts Farm
2 Madgetts duck breasts
2 1/2 fl oz blackcurrant gin
1/2 jar blackcurrants soaked in gin
5 fl oz duck or vegetable stock
1 shallot finely chopped
1 tblsp olive oil
Fry duck breasts in olive oil for 3 minutes each side with shallots
Pour on gin and stock and heat through. Remove from heat
Remove ducks from sauce and put in hot oven gas 7/200˚C for 15 –20 minutes.
When duck is cooked. Reheat sauce and add blackcurrants.
Pour around duck and serve.
