11.15am Lisa Bennett – Chase Farm Ice Cream

Chase farm is a small, family run, dairy farm in the Wye Valley. The Bennett family moved to Chase Farm 5 years ago, taking on the existing herd and set up. Currently the farm has 130 cows in the milking herd and produces its own young stock without the need to buy in any additional stock.   Over the last three years the farm has diversified into on site processing of milk and ice cream. It began with a small vending machine at the farm selling pasteurised and raw milk and grew quickly into supplying local shops and businesses.  Ice cream production began 18 months ago and has grown in demand in that time.

12.15pm Rod Smart – Smarts Traditional Gloucester Cheese – Meet the Maker

True artisan cheese making at its best.  Come and meet Rod Smart and discover all about the fabulous cheeses made at Smarts Farm.

1.15pm Simon Jones – Forest Deli – Loving Local Beers

Alongside a lifelong love of cheese, Simon is also well aquainted with beers.  Since the ancient discovery of how to make beer, it hasn’t changed much, but the hundreds of styles and thousands of breweries mean there are always new flavours to try.  Forest Deli is also very lucky to have a number of very local breweries brewing some excellent beers and Simon will talk about some of his favourites – and also an exciting announcement!

2.15pm Matt Newell – Wye Valley Meadery 

Wye Valley Meadery has been going for just under 3 years. In that time they have gone from brewing in a garage in demi-jons, renting a corner of a brewery in Chepstow, and have now relocated their HQ to a large unit in Caldicot near to the castle which they have been refurbishing since the start of 2021. The business, quantity of bee hives they tend to, and demand for their sparkling and traditional meads have grown rapidly. Over the past few years the founders (and brothers) Matt and Kit have given all of their time and effort to the meadery in an effort to create a product that highlights the wonderful biodiversity of the Wye Valley and add to the already fantastically rich numbers of high quality food and drink producers in Monmouthshire – which is quickly becoming a food and drink icon in the UK.

Matt will talk about the journey so far, the importance of bees and how we can help them, and why we have chosen to brew mead and honey beers

3.15pm Silver Circle Distillery – Wye Valley Gin – Foraging for Flavour

Patrick Doré from Silver Circle Distillery talks about how we forage for wild botanicals throughout the year and how these are distilled into our signature product Wye Valley Gin. A guided tasting will give insight into how each botanical affects the perfectly balanced end result.

 Silver Circle Distillery creates award-winning handmade craft spirits from the Monmouthshire village of Catbrook, deep in the Wye Valley Area of Outstanding Natural Beauty. Founded by Nina and Joe Howden in June 2019, we use local ingredients to create unique products which are often  synonymous with the area.
